2024 Rosé

Tasting notes:
Rosé is something we have done differently every year. The weather of each vintage has been the primary influence behind the style of the rosé. This year we have included a 3rd varietal to the blend, Cabernet Franc to accompany the Malbec and Merlot. All three are harvested and processed the same day. They are treated as one wine from the time they are sorted into a tank.

As this rosé opens in your glass, you will get primary aromatics of fresh strawberry, rose water, and kiwi. The palate is light and refreshing, bringing in tangy citrus fruit, melon and starfruit. The finish is juicy and elegant.

Fermentation and processing:
Cabernet Franc, Malbec and Merlot were picked early in the season before the sugar gets too high because we wanted a low alcohol rosé. The grapes were cluster sorted and destemmed, then transferred to a stainless-steel tank for an overnight cold soak. The following day, the grapes were pressed in a vertical, hydraulic basket press. The juice was fermented in stainless steel. Upon alcoholic fermentation completion, the wine was racked into a cast stone egg. The wine was bottled early to retain freshness.

Smoked salmon roe canapes, crispy oysters with tarragon remoulade, Thai spring rolls.
