This is our third vintage of producing a single varietal Cabernet Sauvignon. We only make this wine when the vintage represents the vineyards full potential. 2023 was an excellent year in which we crafted this Cabernet Sauvignon from the best rows of the vineyard. Aromatics of black currant and eucalyptus are layered with anise, cedar, and notes reminiscent of Chinese five spice. The palate opens with plum and dark cherry before opening into baking spice, and savory tones. Medium-plus in body, the wine carries firm structure balanced by integrated tannins and a persistent finish.

Fermentation and processing:
Fruit was field sorted, cluster sorted, destemmed and berry sorted prior to fermentation. A combination of stainless steel and oak fermenters were used throughout fermentation, with two pump overs performed daily to encourage balanced extraction. Extended maceration periods ranging from five to ten days enhanced texture and complexity. Wine was aged 28 months in new 225l French oak barrels.

Grilled ribeye with rosemary butter. Braised short ribs with roasted garlic. Smoked duck breast with black cherry glaze.
